Looking for a new way to enjoy caprese? We’ve given it a Southwestern flair for a fun new appetizer that will be a party favorite. This recipe can be made vegetarian friendly, or you can choose to add cooked bacon for a more bold bite of caprese. If you choose to make bacon it will need to be pre-cooked. You can cook your bacon in the oven, or you can purchase pre-cooked bacon. Either will work great for this recipe.

 

Does it matter which kind of tomatoes I use?

You can use either yellow or red cherry or grape tomatoes in this recipe. Yellow provides the best contrasting color, but red will also work for a different look. You want to try and purchase tomatoes that are bite-sized for best results. Larger tomatoes will need to be cut into bite sized pieces.

 

Where can I buy Mozzarella balls?

Most grocery stores in the United States will sell mozzarella balls in their fresh cheese section in round plastic containers or air sealed bags. They will be located next to or near the other larger balls of fresh mozzarella cheese.  Fresh mozzarella is generally located in a different section than bricks of mozzarella cheese and shredded cheese. The item you are looking for may be called mini mozzarella balls, bocconcini, or mozzarella pearls. Smaller mozzarella balls

 

Can I make Caprese Bites ahead of time?

Caprese bites are generally best consumed within 2-3 hours after making for the best presentation. The longer the caprese bites sit in the refrigerator, the more like it is for the basil to wilt and the mozzarella balls to dry out. When making ahead, be sure to store the bites in the refrigerator.

Ingredients

  • 20 fresh mini mozzarella balls bocconcini
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 20 leaves fresh basil
  • 6 ounces roasted red bell peppers chopped into 20 pieces
  • 20 yellow cherry tomatoes
  • 4 strips cooked bacon cut into 20 pieces (optional)
  • 20 toothpicks

Instructions

  • Drain the mozzarella balls of liquid and transfer to a small mixing bowl. Pour olive oil over mozzarella and season with red pepper flakes, chili powder, cumin, and garlic powder. Stir to coat.

  • Assemble the bites by using a toothpick to skewer a tomato, basil leaf, roasted red bell pepper, bacon (optional), and a mozzarella ball.

  • 1 medium tomato chopped
  • 3/4 cup chopped strawberries
  • 1/4 red onion finely diced
  • 1/2 jalapeno seeded and diced
  • 1/3 cup freshly torn cilantro
  • 1 lime juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Combine all ingredients together in a bowl and stir until mixed thoroughly.

  • Allow to sit at least 1 hour. Keeps in the refrigerator up to 3 days.

We love to look for ways to use fennel in our cooking. It is so good for you! If you haven’t jumped on the fennel band wagon you should. Fennel has a licorice flavor to it which makes it unlike a lot of other vegetables out there, especially green ones. Its unusual flavor makes it a fun ingredient to work with. This salsa is so light and refreshing and makes the perfect summer snack. With cucumber, fennel, and avocado it is also packed full of vitamins and nutrients too. It’s flavorful, bright, and delicious!

 

How do I cut fennel?

Start by cutting the bulb away from the leafy stems, then slice off the base end where the roots were. You’ll be left with a white bulb. You can now slice and dice this portion. The entire vegetable that you purchase is edible, including the leaves and stems. This recipe only calls for the bulb.

Easy Pico de Gallo Recipe

Pico de Gallo, also known as Mexican salsa, is not only healthy but also delicious since it has great flavor. You may have first noticed it as an offering at Chipotle restaurants. This recipe is very similar, a CopyCat version of the one they offer. Only a few ingredients are required and you can make it in just a few minutes.

I typically serve fresh Pico de Gallo alongside my Slow Cooker Barbacoa and also my Slow Cooker Carnitas for dinner. You can make pico to serve with tacos, quesadillas, or burritos for dinner. Or serve with tortilla chips for a quick and easy appetizer.

Sure traditional Blender Salsa is great, but I most often prefer this Pico de Gallo recipe. Typical salsa has more liquid and has the ingredients blended very fine. I like this recipe best because of the chunky ingredients which I find to taste a bit fresher.

Do you have taco night for your family? We have Mexican food at least once a week, usually more like two or three times per week. My husband often snacks on tortilla chips and salsa in the evening. So I usually have a fresh batch of this Pico de Gallo recipe on hand and made for both dinners and snacks. I have found that it stores well if covered and kept in the fridge for 3-4 days. Sure, we like it best when it is first made, but I find making it ahead of time works too! When I store it, I add a bit of lime juice to freshen it up a bit.

Pico de Gallo Ingredients

  • Tomatoes
  • Onion
  • Jalapeno
  • Cilantro
  • Lime juice
  • Salt

How to make Pico de Gallo

First, you will need to dice your tomatoes and keep all of the juice. I use any type of tomatoes that I have on hand but the best kind of tomatoes for Pico de Gallo are Roma tomatoes. They have fewer seeds and have thick skin. Fresh diced tomatoes for easy Pico de Gallo recipe.

Next, dice the onions and the Jalapenos. I most often use red onion but a white onion will work as well. I typically use an entire Jalapeno diced finely. We like spice. If you are looking for a bit less spice, feel free to use only a half of a pepper.

Now, for the cilantro. I know many do not like the flavor, smell, or taste of cilantro. I personally love it! Making a homemade Pico de Gallo recipe allows for you to customize your salsa. If you would like to omit the cilantro, go ahead and do so. I suggest keeping the authentic flavor.

Finally, we add lime juice and salt before mixing all of the ingredients together. If you should not have fresh lime on hand, store-bought lime juice works too!

As I mentioned, this recipe is so incredibly easy and so delicious. Serve it for your next potluck or Mexican dinner night. Having simple side dishes for Mexican dinners is always great. Here are some additional Mexican sides that I have shared:

  • 3-4 Tomatoes diced

  • Remove stems from cilantro, leaving only leaves.

  • Chop cilantro leaves.

  • Combine tomatoes, onions, jalapenos, and cilantro in a medium bowl.

  • Squeeze lime juice over the bowl and sprinkle with salt. Mix well.

  • For best results, refrigerate 30 minutes before serving.

Easy Instant Pot Apple Pepper Jelly.  We can find a great variety of peppers in the grocery store year ’round, but peak pepper season will be here before you know it and we will be looking for great recipes to use with all of these peppers.  This Instant Pot Apple Pepper Jelly recipe is a favorite around our house.  

Are you a fan of pepper jelly like we are?  This pepper jelly keeps for months and is a great to put out when company is over.  You can pour it over cream cheese and serve with crackers for a beautiful snack or appetizer.  The heat in this recipe will really depend on the type of pepper you use.  This recipe calls for Jalapeno and bell peppers, but you can really use any type of pepper you like.

With summer around the corner, peppers will be everywhere!  You can make some of this pepper jelly and put it up for the winter.  Pepper Jelly makes great holiday gifts and tastes even better over cream cheese with crackers.  I make this recipe and take it to every function I go to.  It is always a hit and people are always impressed that I made it myself.  It also gives me the opportunity to talk about my Instant Pot, which is one of my favorite topics.

The easiest way we use pepper jelly most often is to just pour it over cream cheese and serve it on a tray with our favorite crackers.  Mixing the pepper jelly in cream cheese and serving it as a dip is also delish.  You can also glaze meat with it!  I have served it over fried shrimp with rice on the side and it tastes amazing!  Glazing chicken wings with it is another way my husband loves eating pepper jelly.  The possibilities are endless and, I’m sure, you’ll find your own favorite way to use this super easy and delicious recipe.

I am not even KIDDING you.







This is Tacolicious Legendary Orange Sauce and legendary pretty much describes it.



It’s not salsa. It’s just…sauce. A sauce made with spicy dried chiles (but you can control the heat by how many you add). A sauce with a tang of vinegar, and toasted garlic cloves and charred tomatoes and onions.

I make it to go over these amazing Al Pastor Tacos. But people inevitably start dipping tortilla chips in it.

And then whatever salsa I may be serving gets forgotten.

Because …this sauce is life. 

The best life.

Start out by slicing two roma tomatoes in half and one yellow onion as well. Place the two roma tomatoes cut side down on a foil lined baking sheet. Slice one half only of the onion into 1 inch pieces and lay them on the baking sheet as well. Broil with your top rack of the oven moved up to the highest position for about 10 minutes until the all get a lot of black charring on them.

Remove them along with with any juices to a bowl.

While those are in the oven, take a small skillet and add a drizzle of canola oil. Add in 1/2 cup of Chile de Arbols. Seriously, these things are hot…I make a double recipe and I only add 6 or 7. But if you love crazy hot…add the 1/2 cup.






Toast them in a the hot oil…it happens very quickly. So after a few seconds flip them and then quick remove them to a bowl. Add in your garlic cloves and turn them until they get browned on each side as well. Remove to the bowl.

Add the tomatoes, onions, 1/3 cup of apple cider vinegar and a tablespoon of salt (use the full tablespoon, you need it). Turn your blender on and puree all of this to bits. Then turn it down to low, and drizzle the oil in as slowly as you can, using only a tiny thread of oil at a time. The consistency will be like a thin salad dressing but with a little thickness.

There are so many great ways to use cranberry sauce.  I don’t often eat it by itself, but sometimes I love it by itself.  I have used this recipe in a cranberry cheesecake that was amazing! Make Fresh Cranberry Sauce In Your Instant Pot In 10 Minutes

Ingredients

  • 2
    lbs
    Fresh Cranberries
    rinsed
  • 3
    cups
    Granulated Sugar
  • 1
    large
    Orange
    Juiced and zested
  • 1
    tsp
    cinnamon
  • 1
    cup
    water

Instructions

  1. Pour fresh cranberries in Instant Pot liner.

  2. Add sugar, juice and zest from orange, cinnamon, and water.

  3. Place lid on instant pot and seal.  Close vent.

  4. Set to manual for 10 minutes.

  5. Once the Instant Pot is finished, allow to naturally release for 10 minutes, then manually release pressure.  

  6. Stir and carefully place in mason jars while warm or wait until it cools to place in refrigerator.  

  7. Cranberry sauce will still be liquid while it is warm, but as it cools, it will turn into more of a gel.
