This Chicken Enchilada Casserole is made with an avocado cream sauce for an easy creamy chicken enchilada casserole that the whole family will love!

Enchilada casseroles are a great way to enjoy the flavors of enchiladas without all the hassle of rolling each individually. Avocado based sauces for enchiladas are all the rage these days because they provide a delicious creamy element that is also good for you. Flavored rice is piled on in there to add texture, filler, and extra flavor. We have used corn tortillas, but you are welcome to substitute flour tortillas.

 

Make Ahead Instructions

This enchilada casserole can easily be made ahead. Assemble and refrigerate before baking, up to 1 day in advance. Be sure to store it covered with plastic wrap or aluminum foil to prevent it from drying out. Remove the covering and bake when ready to eat.

What if I don’t have pre-cooked chicken?

This recipe calls for pre-cooked shredded chicken. You can use leftover chicken, rotisserie chicken, or pre-shredded chicken from the grocery store. If you don’t have any cooked chicken, simply place chicken in a pot of boiling water and boil until cooked, about 15 minutes. You can do this while your rice cooks. You can add some flavor to the chicken by boiling it in chicken broth, adding a couple cloves of garlic, and make sure your water is at least salted. Once it is cooked, remove from the liquid and chop it up.

Ingredients

  • 1 cup white rice
  • 1 teaspoon ground cumin divided
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 cup salsa verde
  • 2 avocados pitted
  • 1/2 cup sour cream
  • 1 jalapeno stem removed (optional)
  • 2 boneless skinless chicken breasts cooked and shredded
  • 28-32 corn tortillas
  • 4 cups shredded mozzarella

Instructions

  • Make the rice by pouring rice into a medium saucepan with 2 cups water, 1/2 teaspoon cumin, chili powder, and salt. Bring to a boil, cover, reduce heat to low, and cook for about 15 minutes until all water has been absorbed or evaporated. Fluff and stir rice, and set aside.

  • Make the sauce by combining salsa verde, avocados, sour cream, jalapeno (optional), and remaining 1/2 teaspoon of cumin in a blender. Blend until smooth.

  • Mix a scoop of the sauce with the shredded chicken in a small mixing bowl, just enough to give the chicken a bit of favor.

  • Spoon another scoop of the sauce into the bottom of the pan, just enough to give the bottom a light coating. Cover the bottom a 9×13 pan with tortillas, cutting them in half as necessary. Cover the base with some of the avocado cream sauce. Sprinkle a light layer of cheese over the tortilla base.

  • Spoon half of the cooked rice over the base, along with half of the chicken. Sprinkle with another layer of cheese. Top with another layer of tortillas and spread sauce on top of tortillas. Sprinkle a light layer of cheese over the sauced tortillas. Repeat with remaining rice and chicken.

  • Top with a final layer of tortillas, smother with remaining sauce, and cover  with remaining cheese.

  • Bake at 375 degrees for about 25-30 minutes until cheese is warm and bubbly. Serve hot.

Notes

This recipe is mild. If you want to create a spicy version, add a whole jalapeno into the sauce.

  • 3 cups fresh blueberries
  • 1 bunch fresh cilantro chopped
  • 2 jalapenos minced
  • 1/2 red onion minced
  • 2 red bell peppers diced small

Instructions

  • Pour your blueberries out on a large cutting board. Give them a rough chop. You’ll miss plenty of the berries giving you a nice mixture of whole berries vs chopped. Put them in a large bowl.

  • Add in your chopped cilantro, jalapeno, red onion, red bell pepper, salt, and lemon juice. Stir until combined.

This Authentic Mexican Rice is super easy to make and goes perfectly with any Mexican meal! 

Lauren here from Wicked Spatula!  This recipe couldn’t be more simple. You’ll start by pureeing some tomatoes, onion, garlic, jalapeños, and tomato sauce in a blender. This gives you a super flavorful sauce that will cook right into the rice giving it that lovely yellow/orange color. After that you’ll saute the rice in a little oil in a heavy bottomed pot until golden, pour in the tomato sauce and broth and cook just like normal rice. I like to add a fresh squeeze of lime juice at the end along with some cilantro. Typically I serve this rice with enchiladas, or as a base for burrito bowls!

What is the difference between Spanish Rice and Mexican Rice?

Nothing! Spanish Rice and Mexican Rice are just different terms for the same dish. Depending on where you grow up, or what location you are in, it will be called something different, but they both refer to the exact same thing.

Where is Mexican Rice from?

Even though Mexican Rice can be called Spanish rice, the dish did come from Mexico and originated in the Veracruz region. Originally it was served with a side of beans or fish.

Can I make Mexican Rice with brown rice?

Yes, you can, but the cooking time will change significantly. Brown rice will need to simmer for at least 50 minutes in order to absorb all of the cooking liquid.

Ingredients

  • 2 vine ripened tomatoes
  • 1 white onion
  • 4 cloves garlic
  • 1 jalapeño
  • 1/4 cup tomato sauce
  • 1/3 cup oil
  • 2 cups long grain white rice
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1 Lime for serving
  • 2 tablesponos Cilantro for garnish

Instructions

  • Place the tomatoes, onion, garlic, jalapeño, and tomato sauce in a blender and blend until smooth.

  • Set a heavy bottomed pot over medium high heat, add in the oil and rice. Continue to cook, stirring frequently until the rice is golden and toasted.

  • Add in the tomato puree, broth, and salt. Bring to a boil.

  • Once boiling reduce the heat to low to maintain a simmer and cover. Cook 20 minutes then turn off the heat, let it sit for 10 minutes before uncovering. Garnish with cilantro and a squeeze of lime.

This tender, grilled meat is full of authentic Mexican flavor. This recipe is based off of one from the world renowned chef of Mexican Cuisine, Rick Bayless. It has been altered so that the average home cook can easily make it at home.

 

Carne Asada is all about the marinade. You take a nice piece of steak, marinate it with some delicious flavors, and then head out to the grill for a flavorful piece of beef you can eat plain, on a taco, burrito, or anything else you can think of. It’s so good it is often eaten plain, like the fine steak it is.

 

What kind of meat do you use for carne asada?

Carne asada is traditionally made using skirt steak or flank steak. The two cuts are very similar and can be used interchangeably. The two meat cuts do have a few differences. Flank steak is a more lean option and has a great, intense meaty flavor. Skirt steak also has an intense meaty flavor but does have more tough fibers than flank steak. It should only be cooked to rare or medium-rare, otherwise it may become unpleasantly chewy. Both need to be cut against the grain.

PRO TIP: When cutting your meat, be sure to cut against the grain. It is quite easy to see the grain running through the meat in both of these cuts. It looks like lines. Do not cut parallel to these lines, always cut perpendicular to them. The grain provides a natural breaking point in the meat. If you cut against them then you end up with tons of breaking points in each piece which keeps it from being chewy.

 

What should I serve with Carne Asada?

 

What if I don’t have a grill? Can I make carne asada indoors?

If you don’t have access to an outdoor grill, you can always cook your carne asada indoors on the stovetop.  A stovetop will work the same way as a grill. Heat a large heavy skillet (preferably cast iron) over high heat. Cook the meat for about 5 to 7 minutes per side, or until the desired level of doneness is reached.

TIPS AND TRICKS

  1. Be sure to cut against the grain.
  2. The written recipe calls for marinating in a plastic bag. You can also marinate in a bowl. Just make sure the meat is covered.
  3. If you are one of the people in the world who don’t like cilantro, simply leave it out. Do not replace it with something like parsley.
  4. There are thousands of ways to prepare something authentically. This version of carne asada is cooked authentically on the grill and has an amazing amount of flavor.
  5. When using an outdoor gas grill, heat it to high heat, somewhere around 500 degrees before grilling this meat.
  6. Cooking time is an estimate and depends on the thickness of your meat. Use a meat thermometer for accuracy.

Ingredients

  • 2 limes juiced
  • 4 cloves garlic crushed
  • 1/2 cup orange juice
  • 1 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1 jalapeno minced
  • 2 tablespoons white vinegar
  • 2 pounds flank or skirt steak

Instructions

  • In a gallon size resealable bag, combine lime juice, crushed garlic, orange juice, cilantro, salt, pepper, olive oil, jalapeno, and vinegar. Squeeze it around to mix it up.

  • Put the entire flank steak into the resealable bag. Seal it up tight. Make sure all the meat is exposed to the marinade, squishing the bag around to coat. Refrigerate for at least 2 hours, or overnight.

  • Heat an outdoor grill to high heat.

  • Remove the flank steak from the marinade, and discard excess marinade. Cook on the grill for 7 to 10 minutes per side.

  • Once done, remove from heat and let rest 10 minutes. Slice against the grain, and serve.

If you have followed my Instant Pot recipes for long, then you already know that my favorite thing to cook in my Instant Pot is dried beans.  Not only are they super cheap, but they also have a long shelf life and taste amazing when you cook them in the Instant Pot.  When I decided to try out a white chili recipe, I never imagined I would love it so much.  To be quite honest, my kiddos were getting a bit tired of beans in the Instant Pot.  That was because they all had red or brown gravies and sauces.  This was my first recipe using a white sauce and they fell in love!

There are so many ways to use this recipe too.  I serve it with cornbread most of the time.  Tortilla chips and corn tortillas also make a great side to serve with this white chili.  Since we are from Louisiana, we also serve it over rice from time to time.  I made a vegetarian version of this recipe using vegetable broth instead of chicken broth and squash in place of chicken.  It tasted amazing!

Instructions

  1. Add everything except for frozen corn and hot sauce to Instant Pot.

  3.  Slowly release steam. 

  4. Garnish with pepper jack cheese, olives, sour cream, cilantro, etc. 

  5. Serve with rice or tortilla chips.
