Zucchini has a mild, summer squash flavor that blends perfectly with Italian style dishes. It complements the bold flavors of the spices, sausage and cheese just right, so the zucchini itself is hardly noticeable.

 

Can I make this into vegetarian zucchini lasagna?

Yes. The Italian sausage and ground beef in this recipe can be completely omitted to make the recipe vegetarian. Instead of browning the sausage and beef, simply sauté the onion in 1 tablespoon of olive oil for a few minutes instead. You can even use a meat substitute like tofu or jackfruit.

Can I use a different kind of pasta?

This recipe calls for spaghetti pasta, but you can use any other kind of pasta you’d like. Other pasta options that would work well this recipe include angel hair pasta, shells, penne pasta, and linguine.

 

What type of tomato should I buy?

Any type of garden variety tomato would work in this recipe. You could use 2 large regular tomatoes, 3 medium sized heirloom tomatoes, 3-4 roma tomatoes, or you could even halve 1 pint of either grape or cherry tomatoes. Different varieties of tomatoes may produce a slightly different flavor, but any tomato will work.

Ingredients

  • 1 pound spaghetti pasta
  • 2 large tomatoes diced
  • 1/2 cup fresh basil chiffonade
  • 2 cloves garlic minced
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper

Instructions

  • In a large saucepan, cook pasta according to package directions.

  • Meanwhile, prepare the rest of the ingredients. Combine the chopped tomatoes, basil, minced garlic, and olive oil in a large bowl.

  • Drain the pasta and add it into the large bowl. Stir to combine and add salt and pepper to taste. Toss and serve hot or cold.

Haluski is an easy to make one skillet dinner that is full of comfort food flavors and only requires a handful of ingredients. Your family will love this easy dinner!

The origins of Haluski (pronounced ha-loosh-key) are debatable, but can be claimed in some form or another by the Polish, Slovaks, Ukrainians, and Hungarians. It’s a simple comfort food dish consisting of either egg noodles or a potato dumpling sautéed with cabbage, onion, pork, and sheep or goat’s cheese. The cut of pork you use, the kind of cheese you use, and using either noodles or dumplings will vary from region to region. However you decide to make it, haluski is an easy to make comfort food that only requires a handful of ingredients.

 

How do I make traditional Slovak potato dumplings for my haluski?

Haluski in the United States is often made with egg noodles or even gnocchi to make it an easy and quick meal. The traditional Slovak recipe is made with a potato dumpling, similar to German spaetzle. To make your own traditional Slovak potato dumplings you will need:

  • 2 large potatoes, peeled
  • 3+ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/3 cup milk

Make your dough by grating your potatoes on the smallest shredding option on your cheese grater. Squeeze the excess water out and put the shreddings into a mixing bowl. Stir in the flour, baking powder, salt, eggs, and milk until a dough forms, adding more flour if necessary to achieve a workable consistency. Divide the dough into 6 sections. On a flour dusted surface, roll out each dough section into a long rope or snake. Slice the snakes into 1/4 inch wide “pillows” or dough ball sections. Set aside the cut dumplings until ready to cook. Bring a large pot of salted water to a boil. Working in batches boil the potato dumplings for 3 minutes each batch. Remove from the water with a slotted spoon.

Can I use bacon instead of pancetta?

Yes! Bacon is an acceptable substitution for pancetta in this recipe. It produces a lot more fat and grease so we recommend skipping the butter in this recipe (or reducing it significantly) and simply cooking up your diced bacon in the skillet and allowing the cabbage and onion to sauté in the grease.

Ingredients

  • 1/2 cup butter
  • 1 small green cabbage roughly chopped
  • 1 large white onion halved and sliced
  • 8 ounces pancetta
  • 1 pound egg noodles or gnocchi
  • 1/4 teaspoon black pepper
  • 5 ounces plain goat cheese crumbled

Instructions

  • Melt the butter in a large saucepan over low heat. Once melted, increase the heat to medium high and saute the onions and cabbage in the butter. Saute for 10 minutes, stirring often. Add in the pancetta and saute for another 7 minutes. Remove from heat.

  • Bring a large pot of salted water to a boil. Cook the egg noodles (or gnocchi) according to package directions. Drain well.

  • Add drained noodles (or gnocchi) to cabbage mixture and season with black pepper. Spread crumbled goat cheese over the top and stir gently until melted and everything is combined. Serve hot.

Easy And Delicious Instant Pot 4 cheese pasta  Are you looking for a great pasta dish that will make your week nights so much smoother?  I love using my Instant Pot to calm our hectic school and work days.  this 4 cheese pasta is an Instant Pot staple around our house and I know you’re going to love it too!

Pasta and cheese are a great combination, especially with so many activities going on with our 3 kiddos.  It adds great carbs and protein to their diet in the afternoon just before practice.  Having a quick, warm meal to prepare for my family in the afternoons also helps save big time on our fast food bill.  I have a ton of great Instant Pot recipes in my arsenal that are all ready in just minutes.  Most of the ingredients are either shelf stable or keep for a week or longer in the fridge.

You can easily bulk up this Instant Pot 4 Cheese Pasta by adding grilled chicken or even beef.  Add a salad and rolls and you have a great meal for the whole family.  I double this recipe when I’m adding protein and calling it a meal.  My Instant Pot is clean before I can blink an eye!  Give it a try, make it your own.  Get creative and tell me how you used this great Instant Pot 4 Cheese Pasta with your family!

Easy And Delicious Instant Pot 4 cheese pasta

Ingredients

  • 1 1/2
    cups
    Chicken broth
  • 1
    cup
    Heavy cream
  • 1
    tsp
    Minced garlic
  • 1
    tsp
    Red pepper flakes
  • 3
    cups
    Dry ziti pasta
  • 1
    cup
    Your favorite marinara sauce
  • 3/4
    cup
    Parmesan cheese
    shredded
  • 1/2
    cup
    Italian cheese blend
    shredded
  • 2
    tbsp
    fresh basil
    chopped

Instructions

  1. Add your broth, garlic, red pepper flakes, salt, pepper to your Instant Pot.

  2. Now ad your noodles on top and toss to coat- DO NOT STIR.

  3. Place the lid on the instant Pot and seal closed.  Close your vent to seal.

  4. Set your Instant Pot to Manual for 6 minutes.  Let it do a natural release for an additional 6 minutes, then do a quick release.

  5. Add the red pasta sauce and cream to the Instant Pot and stir to coat.

  6. Add the cheese and stir to combine.

  7. Garnish with fresh basil.  The cheese will melt and thicken the sauce.
