Tuna Pasta Salad

Summer picnics are just around the corner and classic salad recipes are perfect for serving family and guests. Easy salads like this Tuna Pasta Salad or my Loaded Potato Salad, Creamy Broccoli Salad, or Pasta Salad with Balsamic Vinaigrette are great for serving a large crowd at a family barbecue. They are all classic salad recipes that everyone will.

Since tuna is filling and healthy, it is excellent for dinner, lunch, or a side dish. Tuna pasta salad is great to serve with hot dogs, burgers, chicken, or all by itself for a meal. I only use mayo in my dressing mixture for this salad. If you would like to keep the dish a bit more healthy, go ahead and use 1/2 mayo and 1/2 yogurt when preparing the dressing.

Closeup of Tuna Pasta Salad.

Not a fan of tuna? Have no worries. I am not much of a fan myself, but when I mix tuna with pasta, egg, crunchy veggies, and the dressing, the tuna flavor is not overwhelming like many tuna dishes. Creamy Tuna Pasta Salad is the best. I think if you give it a try, you will agree.

Make the Tuna Pasta Salad ahead of time and allow it to chill for about an hour. I find that pasta salads are best after being refrigerated for hours. Some are better after a day or two even. Leftovers are always great too!

How long will Tuna Pasta Salad last?

Go ahead and store your salad in an airtight container. Then place it in the fridge for up to 5 days. If it starts to get a bit dry, go ahead and add a bit of mayo or yogurt to make it a bit wetter.

What are some mix-in alternatives for Tuna Pasta Salad?

Feel free to mix-in cheese, tomatoes, cucumbers, bacon, peppers, or even bacon — tuna pairs well with so many different foods.

How to make Cold Tuna Pasta Salad

First, you will want to cook the pasta according to package directions. Make sure not to overcook. Try to achieve al dente pasta. Immediately transfer the hot pasta to a strainer to rinse with cold water. The rinsing will stop cooking quickly. If the pasta overcooks, it will be mushy consistency. I used traditional elbow macaroni pasta. Go ahead and use your favorite pasta.

Rinsing elbow macaroni for tuna pasta salad.

While the pasta is cooking, I usually chop my veggies and eggs. Also, I prepare the tuna. I drain and rinse tuna a bit more before shredding with two forks.

Next, I make the tuna pasta salad dressing. It is very easy to make. I add the mayo, mustard, relish, and spices to a bowl and whisk well.

Retro 7Up Jello Salad – CincyShopper

7UP Jello Mold on a plate.

[ad_1]

This Retro 7Up Jello Salad makes its appearance often during family potlucks and holiday dinners. Lime Jello, 7UP soda, along with mayo, cream cheese, marshmallows, whipped topping, marshmallows, cherries, pineapple, and pecans create a unique classic creamy salad. Make it in a mold, bundt pan, or 9×13 dish.

Retro 7Up Jello Salad

Classic recipes are always great for the holidays. I always make my Waldorf Salad recipe along with a Watergate Salad for our family gatherings. But this Creamy Lime Jello Salad is a classic that is great for Easter, Christmas, Thanksgiving, or any family potluck because it is so old-school. Jello molds were so popular years ago and are unique.

Lime Jello Mold on a plate.

During the Christmas holiday, I was browsing the internet for Jello molds and I came across this recipe for 7Up Jello Salad. As soon as my eyes spotted this recipe, I knew it was a must try because of its uniqueness. After attempting the recipe and having two failures, I decided it was time to make it in a way that was easier and would allow for the gelatin to set correctly. The third time was a real charm.

Slice of Retro Lime Jello Salad on a plate.

Since I made the salad with not only 7UP soda but also the lime Jello, it is quite refreshing. The cream cheese and the mayonnaise give the recipe just a hint of tang and creaminess. It is full of flavor with some sweetness from the pineapples and cherries so it is kid friendly too. I think it works for a great side dish or light dessert.

Spoon full of 7Up Jello Salad.

7UP Jello Salad is sure to be the star of any get-together. Trust me when I say everyone will be commenting and requests for the recipe will be in abundance. Go ahead and make it in a bundt pan for a real statement, in a 9×13 baking dish, or a Jello Mold if you happen to have one. The bundt pan worked great and my results were perfect.

Ingredients To Make 7UP Lime Jello Salad

  • 7UP
  • Lime Jello
  • Cream Cheese
  • Mayonnaise
  • Whipped Topping
  • Crushed Pineapple
  • Maraschino Cherries
  • Marshmallows
  • Crushed Pecans (optional)

Ingredients to make Creamy Lime Jello Salad mold.

How to Make Retro Lime Jello Mold

First, make sure you have allowed the cream cheese to soften, that step is most important.  Add the cream cheese to a large bowl and beat with a hand or stand mixer until creamy. Then beat in the mayonnaise until combined.

Next, add the Jello to the boiling water. Whisk completely until all of the Jello has dissolved.

Making Lime Jello for Creamy Jello Salad.

Add the dissolved Jello to the creamy mixture, beat until combined. Heavily beat during this step. Have your mixture as creamy as possible with no large white lumps is also important.

Adding lime Jello to cream cheese mixture.

Pour in the 7UP and continue to beat until thoroughly mixed.

Then place the bowl in the refrigerator for 30 minutes. Remove and give the mixture a good stir. Return to refrigerate for another 30 minutes. Stir again.

Sliced cherries on a paper towel.

Drain the cherries. Then cut in half. Let them dry on a paper towel, pat them often. Drain the crushed pineapple well and place on a paper towel. Squeeze as much of the juice/syrup as possible.

Add whipped topping to creamy Jello mixture. Mixing until all is combined well.

Then we fold in the cherries, pineapple, marshmallows, and crushed pecans.

Adding ingredients to bowl with Creamy Lime Jello Salad.

Lastly, we heavily grease the bundt pan, Jello mold, or baking dish. Be sure to heavily coat. Then pour the mixture into the prepared pan. Refrigerate for at least 6 hours. When ready to release the salad from the bundt pan or mold, use a knife to release the edges and the inner ring. Add a plate to top and tip. The salad should release very easily. Give it a couple of light taps if it should not release right away.

Why is there Mayonnaise in this 7UP Lime Jello Mold?

The mayo will add a bit of creaminess and helps with the texture. Do not be alarmed because the salad will not have a mayonnaise flavor.

Can I use Fruit Cocktail or other canned fruit for this Retro 7Up Salad?

Sure you can! I have seen this recipe made with all sorts of different fruits. My first tip, if you should use canned fruit other than crushed pineapple, would be to drain and pat all of the fruit as dry as possible. If you should omit this step, your Jello Salad will not set correctly.

Can I substitute other flavors of Jello?

Sure! Go ahead and try a cherry, strawberry, lemon, or any other flavor of Jello that you prefer. Most any fruit will pair well with the many available flavors of Jello.

What pan will work best for Lime Jello Salad?

I have only tried using a basic 10-inch bundt pan for this Classic Jello Salad. Avoid using any bundt pan with any fancy detailing. I was sure to heavily grease my pan because I wanted the mold to release easily. If you do not have a bundt pan, I am sure you could use a Jello Mold or a 9X13 pan.

Can I make Retro 7UP Jello Salad ahead of time?

Yes, you will want to prepare your Jello mold about a day in advance because you will need to allow time for the gelatin mixtures to set correctly. The salad can last for about five days when refrigerated.

Creamy Grape Salad – CincyShopper

Grape Salad in a bowl.

[ad_1]

This Creamy Grape Salad will be perfect for a holiday side dish, also great for a summer bbq or pot luck dish. With just a few minutes prep and a couple of simple ingredients, you can have a crunchy, creamy, and sweet salad that everyone will love!

Grape Salad

During the summer months, I like to make fruit salads for our family potlucks and BBQ’s. Most of the time, I will make our basic Creamy Fruit Salad. But when I am looking to make a simpler salad, this Grape Salad with yogurt dressing knocks it out of the park. The salad is so simple but I find it simply delicious. I make the dressing with cream cheese, yogurt, sugar, and vanilla. We toss everything together and then top with brown sugar and chopped pecan topping. That’s it, it’s so easy to make.

Spoon with Creamy Grape Salad.

Grape Salad is so very popular for potlucks. There are so many different variations that others will make. Some other recipes will use Cool Whip topping or marshmallow cream. Others will use a sour mayo type of dressing. You will see some others will top their salads with toffee bits or even butterfingers for additional sweet and crunch. I like simple recipes that I know many will enjoy. So I keep this creamy salad simple. Go ahead and be creative with your toppings if you choose.

Creamy Grape Salad with toppings in a bowl

I have made this Grape Salad and each and every time it is always a favorite. Most everyone at our family gatherings requests a copy of the recipe. I will quite often make it for a dinner side dish during the summer months. If I make it for a dinner side, I just half the recipe.

Bowl with grape salad.

I like to use red and green seedless grapes for my grape salad. The first time I made this recipe, I was making it as a Christmas side dish so the red and green were perfect for the holidays. I continued to make it with both colors of grapes since then, maybe out of pure habit. You can use all green or all red or a mixture of each like I have.

Half bowl of grape salad

First off, if you are making this Grape Salad recipe, you’ll want to wash your grapes with cold water. I like to use a colander for easy rinsing. I then cut all of the grapes in half especially if children will be enjoying, full-sized grapes are a serious choking hazard for the little ones. After cutting, I like to dry my grapes on a sheet pan lined with paper towels to allow the grapes to dry a bit. I also blot with an additional paper towel.

Close picture of grape salad.

The dressing I make for the Grape Salad is so simple since it is made with cream cheese, yogurt, sugar, and a bit of vanilla. Be sure that your cream cheese has softened. I use a hand mixer most of the time to allow for easy cleanup. I usually cream it for a few minutes time. The softer the cream cheese, the creamier the dressing tends to be. The addition of the sugar and vanilla add some extra sweetness.

Lifted spoon of creamy grape salad

I then top my Grape Salad with a bit of brown sugar and chopped pecans. The sweetness and crunch from the toppings are perfect. You will find the entire salad to be just a bit sweet with just enough crunch. If you should use an overly sweet grape, you may want to cut back on a bit of the sugar.

Can I make Creamy Grape Salad Ahead of Time?

I find this salad to be best if served shortly after tossing all the ingredients. If you are looking to have your salad made ahead of time, I suggest adding the dressing and topping just before you are serving. I prep everything and have it ready to mix. If you are looking ahead say an hour or so, go ahead and add your dressing but leave the toppings for when ready to serve.

Traditional Creamy Coleslaw – CincyShopper

Creamy Coleslaw in bowl.

[ad_1]

You will want to make this Traditional Creamy Coleslaw for your next potluck or family BBQ. We toss crisp green cabbage and carrots with a creamy homemade dressing. It will quickly become your families favorite side dish!

Traditional Creamy Coleslaw

My coleslaw recipe is the perfect combination of crunchy, sweet, tang, and creaminess. First, I use fresh green cabbage finely shredded with my mandoline slicer. Then, I freshly grate carrots. This gives the salad just the right amount of crunch. Lastly, I make a creamy dressing. It’s made with mayonnaise, apple cider vinegar, salt, pepper, and sugar. That’s it, just a few ingredients. The recipe is basic, but it makes this the best coleslaw recipe.

Traditional Coleslaw in bowl.

Sure, you can head on over to your deli at your local grocery store to purchase a pre-made mayonnaise-based coleslaw. But, I know most prefer a fresh homemade classic slaw. Making it at home is so super easy and the flavor is so much better.

Creamy Coleslaw on spoon.

The coleslaw salad will need to chill before serving. I find it to be best after about an hour or so in the refrigerator uncovered. If you should need to make your salad more than an hour ahead of time, you can keep your dressing separated from the cabbage and carrot mixture. Then an hour or so before serving, you can mix it together.

Homemade coleslaw on spoon.

Tips for making the best coleslaw:

Wash the cabbage and carrots well with cold water.
Use a small to medium sized head of cabbage with most of the green leaves removed. You will want to use the inner light colored part.
Cut the head of cabbage in fourths. Then cut the core off of the end.
Use a mandolin slicer for the best long ribbons. Set your slicer as thin as you can. If slicing by hand, you will not achieve the proper texture for your slaw.
When grating the carrot, make long runs across the grater. The results are much better than small bits of carrot.
When adding your homemade dressing be sure to mix and coat well.
Do not serve immediately. Allow the salad to marinate for about one hour.

What should I serve with coleslaw?

Coleslaw pairs so well with all our favorite barbecue dishes like ribs, burgers, pulled pork sandwiches, and dogs. I find it to be a perfect side for summer BBQs. You can also serve coleslaw with fried chicken as most southerners do.

How long will coleslaw last?

Your coleslaw should stay fresh for around 3-4 days after preparation. However, your coleslaw will deteriorate over time. It is always best to eat your coleslaw the day of making it for maximum freshness and taste of the ingredients.

Can I use the store bought pre-shredded coleslaw mix?

Sure you can! Sometimes if I am pressed for time, I will purchase the prepackaged shredded cabbage and carrots to make an easy coleslaw. I do prefer to use fresh ingredients though as they are better for you and make for a better slaw texture.

Ingredients to make creamy coleslw

Ingredients needed to make Creamy Coleslaw

2 cups Shredded Carrots
3/4 cup Mayonnaise
2 tbsp Apple Cider Vinegar

Slow Cooker Split Pea Soup

Split Pea Soup in a bowl with spoon.

[ad_1]

Grab your Crockpot to make this comforting and delicious Split Pea soup. The recipe is so super easy. You can make this one with or without a leftover ham bone.

Slow Cooker Split Pea Soup

If you are anything like me, you are always on the hunt for quick and easy slow cooker recipes. My recipe for Split Pea Soup is one of those recipes. The prep time is so minimal and since we use a Crockpot, there is no real effort involved. I toss everything in and let it cook for the day. So very simple.

Slow Cooker Pea soup in a bowl.

I posted this recipe way back when I started my food blog years ago. Since I was making a batch of of this tasty soup, I figured it was time to update with some fresh pictures and even some additional cooking tips.

Split Pea Soup with carrots and ham in a bowl.

Split Pea Soup has always been one of my favorite soups to enjoy on a cold day. I admit that most of the time, I make a can of Campbell’s. I have one kiddo that was adventurous enough to try the overly green and unappealing soup. I thought the effort to make homemade would be sort of a waste if the rest of my crew was not going to enjoy it.

Spoon of slow cooker split pea soup.

But the adventurous child requested a homemade split pea soup years ago and I have made it from scratch ever since. My slow cooker recipe is one that is so easy. The flavor is so much better than store bought. Plus, using the fresh ingredients keeps it much healthier.

Split pea Soup with text.

If I have leftover ham or a ham bone, I usually use it because the flavor from a ham bone makes the soup that much better. Since I do not make ham that often, I mostly make our Split Pea soup with store bought cubed ham. If I have potatoes, I dice them and add them to the pot occasionally too. If you like potatoes, go ahead and add them in for some additional flavor.

Spoon of split pea soup

I serve most of our soup recipes with some crusty bread and crackers. The bread is great for dipping. The flavors from the fresh vegetables, the ham, and additional spices really makes the pea soup so much better than store bought.  The recipe is easy and so filling. You will find yourself making this recipe again and again.

Ingredients for split pea soup.

Ingredients to make Slow Cooker Split Pea Soup

1 lb Dried Split Peas
2 cups Diced Ham
4 Carrots sliced
1 Medium Onion Diced
2 tsp Minced Garlic
1 bay leaf
2 tsp Parsley Flakes
1 tsp Celery Salt
1 tsp Salt
1/2 tsp Pepper
6 cups chicken stock

Split Pea Soup ingredients in a slow cooker.

How to make Split Pea Soup

Rinse the split peas and add to slow cooker.
Add remaining ingredients to slow cooker.
Cook on low 8-10 hours or on high for about 4 hours.
Remove bay leaf.

Adding broth to split pea soup in a Crock Pot.
Split Pea soup in a slow cooker.
Bowl of hot split pea soup.

Do I need to soak my peas before adding them to the slow cooker?

No soaking is needed for this recipe. Soaking the peas just allows for the peas to cook much quicker. Since this is a slow cooker recipe, there is no reason to have to soak your split peas.

Can I use a Ham Bone in this Slow Cooker Split Pea Soup?

I find this soup to be best when using a nice ham bone with lots of meat left. I always make this one after Easter because I have the leftover ham from our holiday dinner. A meaty ham shank works great too. Just add your ham bone or shank when adding all of your ingredients to the slow cooker. After the soup has cooked, remove your bone. The meat should fall off the bone during the cooking process.

Can I make Pea Soup without ham?

Sure, you can make this one with no meat at all. You can also use bacon. It adds great flavor and works perfectly as a substitute for the ham. You will want to fry your bacon and get it crispy before adding it to your soup. You can add at at the beginning or at the end for a topping.

Can I use water instead of chicken stock?

You can use water instead of the chicken stock in this recipe. I sometimes do not have stock on hand and we just use water. I find that the chicken stock adds some additional flavor but it is not needed.

Why is my soup very thick?

When making Crockpot split pea soup, it will thicken more and more the longer it cooks. If you like your soup a bit thinner, go ahead and add in some additional water or broth to make it thinner.
